National Eggs Benedict Day

Easy Hollandaise Sauce

3 egg yolks
1 Tblsp. lemon juice
1/8 tsp. cayenne pepper
1 cup salted butter, melted

In a blender,combine egg yolks, lemon juice, and cayenne at medium speed.  On low speed, drizzle in butter.  Add more lemon juice or salt, to taste.
Serve immediately.

Buzz: use 'hot' melted butter
